The method of roasting Beijing duck can be divided into two different ways.  One way is to hang ducks into a specially designed wall oven.  While cooking, the ducks are roasted by burning millet stalks inside, with the oven door closed.  And the other way, which we have taken, was handed down from the court to public restaurants by the end of the Qing dynasty and made further improvement in Quanjude.  According to traditional techniques, plump Beijing duck of the best quality should be used.  And the ducks dangle from parallel horizontal bars while cooking.  The burning wood of fruit trees provides an open-fire outside.  A duck roasted in this manner is crisp to the touch and golden brown in appearance.  It's flesh remains both tender and tasty.  So that is why Beijing duck becomes a most well-known delicious food among typical local dishes in Beijing.
